Finding the right group of cake recipes can be like finding buried treasure, and this list of yummy desserts is the mother lode. All of the recipes below require your oven to be preheated to 350 degrees F except the brownie cake.
1. Kit Kat Candy Cake
Kit Kat Candy Cake: As far as children's cake recipes go this one is perfect! Grease two 8 inch round pans so that they're ready for use. Mix up 1 and 3/4 cups of flour, 2 cups of sugar, 3/4 cups of cocoa, 2 tsp baking soda, 1 tsp baking powder, 1 tsp salt, and sift together in a bowl. Add a mixture of 1 cup buttermilk, 1/2 cup vegetable oil, 2 extra-large eggs, 1 tsp vanilla extract, and one cup of coffee. Bake for 35 minutes, with chocolate frosting, line the edges with sticks of Kit Kat bar and top with M&M's!
2. Spicy Pumpkin Cake
Spicy Pumpkin Cake: Cake recipes for the holidays aren't complete without this show stopper. Grease two 8 inch cake pans with butter. Blend together 2 and 3/4 cups of flour, 1 and 1/2 tsp of baking powder, 1 tsp baking soda, 1 and 1/2 tsp cinnamon, 3/4 tsp nutmeg, 1/2 tsp salt, 2 cups of brown sugar, and 3/4 tsp of grated ginger. Now beat in a mixture of 2 sticks unsalted butter at room temperature, 1 and 1/2 cups of solid-pack pumpkin, 1 tsp vanilla, and 1/2 cup of buttermilk. Bake for 35 minutes, and ice with cream cheese frosting.
3. Maple Cake
Maple Cake: Grease and flour one 9 inch square baking pan. Now sift together 2 1/2 cups flour, 2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, and 1/2 cup sugar. Blend in a mixture of 1 cup unsalted butter at room temperature, 3/4 cups of maple syrup, 2 large eggs, 1 tsp vanilla, and 3/4 cup of sour cream. Bake for 40 minutes, and when cool ice with a mixture of 1/3 maple syrup, 3 tbsp unsalted butter, and 2 1/2 cups confectioner's sugar.
4. Pound Cake
Pound Cake: Blend together 1 pound of flour, 1 tbsp salt, 4 sticks of softened butter, 2 cups sugar, 1 tsp vanilla, 9 large eggs. Grease two 9 x 5 loaf pans, and bake for about 65 minutes. Frost this family favorite with a rich and creamy buttercream frosting.
5. Carrot Cake
Carrot Cake: Grease three 9 inch round pans. Now blend together 2 and 1/2 cups of flour, 1 tsp baking powder, 1 tsp baking soda, 1 tsp ground cinnamon, 3/4 tsp salt, 1/2 tsp ginger, 1/4 tsp nutmeg, and 1 cup brown sugar. Now mix that with a blend of 3 sticks of unsalted butter, 3 large eggs, 2 tsp of vanilla, 1/2 cup of water, and 1 lb grated carrots. Bake for 30 minutes, cool, and layer the cakes together with cream cheese frosting in between and on top.
6. Lemon Cake
Lemon Cake: Grease two 8 inch pans, and sift together 2 and 1/2 cups flour, 1/2 tsp baking powder, 1/2 tsp baking soda, 1 tsp salt, 1 tsp lemon zest, and 2 cups sugar. Now mix in 3 large eggs, 1/4 cup lemon juice, 1 cup buttermilk, 1 lemon thinly sliced and seeded. Bake for 35 minutes, and ice with a vanilla frosting.
7. Brownie Cake
Brownie Cake: Grease and flour a 9 inch pan, then mix together 1 stick of unsalted butter, 3 tbsp flour, 6 ounces bittersweet chopped chocolate, 3/4 and 2 tbsp sugar, 1 large yolk and 3 egg whites, 1/4 cup cocoa, and 1/2 tsp salt. Bake for 33 minutes at 325 degrees F, and enjoy either plain or iced with chocolate frosting.
