When the holiday season arrives most households get fully involved with making lots of plans. Most of those exciting times are spent in the kitchen and what would a Christmas Eve or a Christmas Day be without good cookies on the table? Yet there are countless Italian recipes to choose from so how do you decide which ones will make the best result? Here are 6 Italian Christmas cookie recipes to start with.
1.) Almond Coffee Cookies
By joining two favorite flavors, almonds and coffee, together you can make awesome cookies that everyone won't be able to get enough of.
To prepare the paste, boil the almonds and remove the skin. Let them cool and dry before you put them in a food processor to chop them into fine granules. Put the chopped almonds in a bowl, add lemon zest, sugar, ground coffee, and the cocoa powder and mix well. Add egg whites and mix until diluted. Take a lump and roll it up into the size of a golf ball. Insert a coffee bean on the top. Then bake the cookies for 30 minutes at 350 degrees.
2.) Italian Ricotta Cheese Cookies
Beat sugar and butter until blended, and then add ricotta, vanilla, and eggs until thoroughly mixed. Add flour, baking powder, and salt until the dough forms. Place tablespoons of dough 2 inches apart on an ungreased baking sheet. Bake for 15 minutes at 350 degrees or until you get a light golden color. When cooled add icing (mix confectioner's sugar and milk). Top with colored sprinkles.
3.) Bird's Nests
This is a favorite among the Italian Christmas cookie recipes. Melt butterscotch chips until smooth. Add the peanuts and stir. Add crushed chow mein noodles and mix with a fork. Cover cookie sheet with wax paper and place tablespoon size balls on the sheet. Refrigerate and when cooled store in airtight container.
Boil the almonds and remove the skin. When they are dried put them in a food processor and finely chop them. Add lemon zest, sugar and egg whites and mix until it becomes a paste. Make a roll of dough that is about 1/2 inch thick. Flatten it and make ridges with a fork. Cut the roll into strips and place them on a cookie sheet.
Make your icing by mixing the milk and sugar until it is a thick liquid. Brush the icing onto each cookie and let dry for several hours before serving.
5.) Chocolate Macaroons
Melt the butter in a saucepan over low heat and then add in the chocolate squares. Once blended remove the mixture from the heat. In a separate bowl, add sugar and then pour warm chocolate over sugar. Mix and add eggs, vanilla, baking powder, and flour until it becomes dough. Cover with plastic wrap and refrigerate for 1 hour. In a separate bowl add 1 to 1 and 1/2 cups confectioners sugar. Break off small pieces of dough the size of a walnut and roll into balls. Roll the balls in the confectioners sugar and bake on a parchment lined cookie sheets for 5 minutes in the middle of the oven.
6.) Cranberry Eggnog Drop Cookies
