1. Salty Kale Chips
This can sometimes be considered an unhealthy option, but when you compare it to potato chips, it's certainly much healthier. You can also bake your kale chips for an even healthier option, although you will still need to add a pinch of salt and pepper, and 2 tablespoons of olive oil to your parchment lined cookie sheet.
2. Kale Salsa
Believe it or not, you can add to your list of healthy vegetarian kale recipes an awesome salsa. Two cans of diced tomatoes must be drained and mixed with diced cilantro, add one diced fresh tomato for extra texture. In a medium saucepan saute half a Spanish onion that has been minced with 8 ounces of ribbed diced kale. Cool and mix with the tomato cilantro mixture, add a tablespoon of lime juice and 2 tablespoons of hot sauce for a kick.
3. Kale And Peach Salad
These two might not be known to go together, but if you rib and dice your kale into bite sized pieces, you can make a really nice salad with fresh sliced peaches, red wine vinegar, a drizzle of olive oil, and 1/4 cup of fresh corn.
4. Kale Breakfast Sausage
To make your breakfast healthier, grab some meatless ground round and mix in a bowl with kale that has already been cooked and cooled. About 8 ounces will do, and the only additional ingredients necessary are salt and pepper to taste and about 1 tablespoon of olive oil. Form patties and place in skillet on medium heat. Fry until brown.
5. Kale Omelette
This is a good recipe for leftover kale that you have cooked the previous night. Mix together 2 egg whites and one whole egg with a pinch of salt and pepper and pour into a hot skillet. Sprinkle in leftover cold cooked kale and fold into omelette as it firms.
6. Kale Basmati
For a curry side dish that will make your friends ask for your list of healthy vegetarian kale recipes bring a pot of 2 cups of water to boil and reduce to medium heat. Add 1 cup of basmati rice, 2 tablespoon of olive oil, and 1/2 tablespoon of salt. Rib and dice one cup of kale and place into pot with rice, cover and cook until water has evaporated.
7. Kale Tacos
Rib and rinse 1 cup of kale, dice one tomato, saute cubes of firm tofu with olive oil, chili powder, salt, and pepper, pile ingredients into soft or hard taco shells and serve.
8. Kale and Carrot Soup
In a food processor blend one bunch of small fresh carrot, 1 tablespoon ginger, pinch of salt and pepper. Add to pot with 1 cup vegetable stock and simmer on medium until thick. Blend 2 cups of ribbed kale that has been boiled until wilted. Pour carrot soup into bowl then pour kale blend in a circle around the top.
9. Kale Bran Muffins
For an added burst of health to your morning muffin, try adding blended cooked kale to your mix. You may need to bake for an extra 3 minutes due to additional liquid.
10. Kale Smoothie
Blend together 1/2 cup pineapple, 1/2 cup plain Greek yogurt, 1/2 cup frozen kale, blend until smooth and enjoy!
11. Kale and Avocado Salad
This is the last one of our healthy vegetarian kale recipes but certainly not the least. In a salad bowl add ribbed, diced kale, 1 pitted peeled avocado diced, and 3 tablespoons of lemon juice. Toss and enjoy!
